Bagel Tags: baking   bagel   digidi   everythingonit   basicnewyorkwaterbagels   everythingtopping    After purchasing some bagels at the grocery store in their bakery section, I was stunned to find out that they were a $1.09 a piece at the checkout. I had been wanting to make bagels for ages but lately it got to be too much for me and I had to get busy in the kitchen again! This is my first try, and I am sold on the idea. I will be making my own from now on. I used the 1 1/2 pound recipe and I'm glad I did. I was able to get 7 bagels. Below is the basic recipe that I use. BASIC NEW YORK WATER BAGELS 1 1/8 cups water 1 Tbs. vegetable oil 2 Tbs. malt syrup, molasses or white sugar ( I used molasses) 1 Tsp. salt 3 1/3 cups of bread flour 2 Tsp. active dry yeast Use Dough setting on your Bread Machine. Once done. Shape dough into bagels and place on a slightly greased baking sheet. Cover and let rest for a rise of about 20 minutes. Use a soup pot and fill with water. Get water to a boil. Once 20 minutes is up, place several bagels at a time into the boiling water. Let boil about 30 sec to 1 minute on each side. Place on a rack to cool. Once cooled a bit then Glaze. Preheat Oven to 400 Degrees. Glaze: I used a beaten egg. Brush the bagels after they've cooled from a water bath. Topping: I used an Everything Mixture after glazing. I dunk them in a bowl of prepared mixture of oats, dried onions, garlic flakes, sesame seeds, poppy seeds. Put in Preheated 400 Degree Oven. Bake 20 minutes. Bagel is called a White Face Blonde in the sugar glider world because he's missing the typical black bar under his ear and chin. He also has a white tipped tail. You can see it under his front paw. Even though he's younger than Seaweed by a month, he's much larger although it's hard to tell in this picture. Bagel is an intact male and I am going to have him neutered. He's marking his territory in the cage and it makes the cage stink. Recipes for Bagels and for Pizza were my strongest impetus for buying this book (and other cookbooks). I'd made bagels from Betty Crocker's Breads and although they were nice, I wasn't too impressed. I studied this recipe for days or even weeks when I got this book. I intended to make it first but I decided to try something with a lot less steps and hopefully less complicated, ie, the Marble Rye and then expand my horizons. Bake for 5 minutes at 500 F in the centre racks and then rotate the pans and their positions and bake for 5 more minutes at 450 F or until a nice acceptable golden brown. Blogged here. The difference is that I have to make them gluten free, which proved difficult, but I know I will do better next time. They're a little flat, but for the first time: Gluten Free Vegan Bagels! 2 tbsp yeast 1 tbsp agave 2 cups hot water 4 tbsp agar 4 cups brown rice flour 1/2 cup of quinoa flour 1/2 cup potato flour 1/2 cup masa flour (fine cornmeal) 1/4 cup tapioca flour 1/4 cup corn starch (basucally 6 cups of flour altogether) 1 and 1/2 tsp xanthum gum 1 and 1/2 tsp guar gum 2 tsp salt 1/2 cup oil more agave and water to boil the bagels in boil the water, add the agar, let sit for 10 - 15 minutes add the yeast, agave, and 2 cups of the flour let stand for 10 minutes to make a sponge stir in the oil add the rest of the flour, gums, and salt first stir with a whisk then continue with a spoon or your very clean hands Shape the dough into bagels, I have not yet figured out how to make them look nice, but I'll tell you when I do! This should make about 12 bagels let stand for 5 minutes preheat the oven to 375 degrees F Boil a 4 quart saucepan filled 2/3 of the way with water add four bagels at a time, boil, covered with a lid, for about 30 seconds take them out and place them on a greased pan. It's been a while since I've made dough by hand and I realized how much I like doing it. It's incredibly satisfying to turn all the raw ingredients into something tasty to eat. Making them yourself means you get to customize the toppings. I tried black sesame seed and think it's pretty good. I also used regular sesame seeds but will used the pre-toasted ones next time. I thought these would toast along with the bagel, but they didn't.
