The Burning Dirty Band : It's come to our attention here at BDB HQ that we know our way around a grill. And seeing as Memorial Day weekend is approaching, you may be looking for guidance on what to prepare over an open flame. Lucky you for knowing us.
Hot dogs? What are you, seven years old?! What reasonable adult is honestly excited about hot dogs at a cookout? Step up your game. Burgers? Tasty, but messy to prepare and easy to overcook, especially after you've had a beer or five.
The Dirty choice is bone-in, skin-on chicken thighs. Five pounds is a good starting point. Marinate them thangs in some vinegar, maybe with a bit of pickle brine, beer, and several glugs of hot sauce for good measure. Plenty of salt and pepper plus cumin, paprika, coriander powder, onion powder, garlic powder, brown sugar and chile flakes. Let them sit for a few hours while you add some bottles and cans to your recycling bin. Prepare your coals for indirect grilling (look it up if you don't know this vital skill). Give those thighs four or five minutes per side of high heat, and then move them off to the side skin side up. Add a handful of wood chips to the coals. Cover. Baste lightly every 20 minutes or so with leftover marinade. Add more wood chips as needed. Continue enjoying beverages and smelling the amazing chemistry happening on your grill. Chicken thighs are almost impossible to overcook- if you smell burning, move 'em, dummy. A touch of pink color near the bone won't kill you, ya pansy. 90 minutes of low-ish, indirect heat is about right. Pull 'em off and let rest for at least five minutes before tearing into your delectable, smoky bird parts like a pack of fevered wolverines.
